Meat Shares

Whole, half, and quarter shares of beef or whole and half shares of pork are the perfect way to stock your freezer full of healthy, sustainably raised meat from Apple Horse Farm. Buying in bulk is convenient and priced at a discount compared to our individual cuts. All meat is processed at a USDA inspected processor and cuts are individually packaged, labeled, and frozen.

Our shares are priced based on the exact amount of meat you receive. Most farms price shares on hanging weight of the animal which requires you to pay for a lot of weight that doesn’t transfer to the total amount of meat you receive.

Pork Share

Our hogs are raised on pasture or in the woods for their entire life span. They always have enough space to root, run, wallow, explore and forage. Raising pigs on pasture translates to the quality of the meat when compared to conventionally raised pork. Pastured pork is richer in Vitamin E, Vitamin D, and higher in Omega-3 fatty acids.

We have a set cut sheet for shares in an attempt to minimize mistakes made by the processor (e.g. missing a cut completely, cutting something at the wrong size, etc). For pork we do offer a few variations like whole hams or whole bellies.

Price Breakdown

Pork is $7.25/lb for all meat you receive. You are only paying for what you get, not the hanging weight of the animal.

Total amount of meat: ~50 – 70 pounds

Approximate count of items: 4 – 5 packages Center Cut Chops, 2 – 3 packages Ribeye Cut Chops, 1 – 2 packages Sirloin Cut Chops, 1 Tenderloin, 3 Boston Butt Roasts, 2 Spareribs, 2 – 3 Hocks, ~30 lbs of a variety of linked and ground sausages (ground breakfast, ground pork ground chorizo, small breakfast links, bratwurst links, cajun links, kielbasa links, and/or griller links)

Whole hams and whole bellies are an option. Generally, we use the ham and bellies towards sausage because our processor is unable to cure or smoke either of these cuts. If you’re feeling adventurous and would like to cure and smoke these cuts on your own let us know! Keeping either of these cuts whole will decrease the amount of sausage you receive.

Packaging Details

All chops are cut 1.25 inch thick with 2 chops/package. Large links are ~1/4 pound each with 4 links/package. Boston Butt Roasts are bone-in ranging in size from 2 – 3 pounds each. Ground sausage is ~1 pound/package. Everything is vacuum sealed and labeled.

Beef Share

Our beef is fed an all grass diet for its entire life, we do not supplement with grain ever. During the Spring, Summer, and Fall the cows are rotated around our pasture daily so they always have access to fresh grass. In the Winter, we feed them hay that has been baled on our own farm so they can continue to maintain a healthy weight even when the grass isn’t growing.

Packaging Details

Steaks are packaged individually. Roasts range in size from 2 – 4 pounds. Briskets are cut in quarters for ease of splitting amongst shares, usually around 2 – 3 pounds each. Ground beef is packaged in ~1 lb packages. Everything is vacuum sealed and labeled.

FAQ

Can I fill out my own cut sheet?

Our pork and beef shares contain a set list of cuts according to what our processor can cut and popularity, although we can try to adjust a few cuts based on your preference.

Is the meat USDA certified?

Yes, the processors we use follows all USDA regulations and our meat is processed following those guidelines.

Is your beef dry-aged?

Yes! Our beef is dry-aged for 21 – 28 days which encourages tenderness and a complex flavor.

How much freezer space will I need to accommodate a meat share?

We estimate that our shares require the following amount of space:

Pork – Half: ~3.5 cubic feet, Whole: ~7 cubic feet

Beef – Quarter: ~4.5 cubic feet, Half: ~9 cubic feet, Whole: ~18 cubic feet

How do I acquire my share when it is ready?

We would love to schedule a time for you to pick up your meat at the farm or we can schedule a delivery or meet up within a reasonable distance. Remember to bring coolers with you for transporting!

Do I need to pick up my meat immediately after processing?

We are flexible with arranging a pick up time and will store your meat in our walk-in freezer until you are able to pick it up. Everything will be frozen regardless of pick up time.

Do I need to pay a deposit to guarantee my share?

Currently, we do not require a deposit but if you change your mind on wanting a share please let us know as soon as possible so we can offer it to our next customer.

How do I sign up for a share?

Do you offer bacon?

Unfortunately, our current processor does not have the ability to cure or smoke bacon at this time. If you are interested in uncured, unsmoked sliced pork belly or a whole pork belly slab for your share we are happy to accommodate that request if notified before processing. Please note this will reduce the amount of sausage you receive.

Keep in mind…

We are still a small operation and are only processing a limited number of pork and beef at specific times of the year. Typically, we do not have shares on hand at the farm because they are spoken for months before. We appreciate you being patient with us as we thoughtfully raise local meat and manage the process of getting it in your hands. If you are seriously considering a pork or beef share please reach out as soon as possible so we can get you on the list.
